The Keto RN Mediterranean Shrimp Bowl (Low Carb, GF/DF)
Ingredients:
• 1 lb shrimp, peeled & deveined
• 2 Tbsp olive oil
• 1 tsp smoked paprika
• 1 tsp cumin
• Salt & pepper to taste
• 1 cup cauliflower rice per serving
• Cucumber, diced
• Cherry tomatoes, halved
• Kalamata olives
• Fresh parsley
• 2 Tbsp tahini
• 1 Tbsp lemon juice
• 1–2 Tbsp water (to thin dressing)
• Garlic powder & pinch of salt
Instructions:
- Toss shrimp with olive oil, paprika, cumin, salt, and pepper.
- Cook shrimp in a skillet 2–3 minutes per side until pink.
- Assemble bowls with cauliflower rice, cucumber, tomatoes, olives, and parsley.
- Mix tahini, lemon juice, water, garlic powder, and salt for dressing; drizzle on top.
