The Keto RN Mediterranean Ground Beef Skillet

Ingredients:

  • 1 lb ground beef (or ground lamb)

  • 1 tbsp avocado oil or olive oil

  • 3 cloves garlic, minced

  • 1 small red onion, diced

  • 1 red bell pepper, diced

  • 1 medium zucchini, diced

  • 1 cup grape tomatoes, halved

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • ½ tsp ground cumin

  • ½ tsp sea salt (to taste)

  • ¼ tsp black pepper

  • Juice of 1 lemon

  • ¼ cup fresh parsley, chopped

  • ¼ cup fresh mint, chopped (optional)

Instructions:

Heat oil in a large skillet over medium heat. Add garlic and onion, sauté 2–3 minutes.

Add ground beef, breaking up as it cooks. Brown for 6–7 minutes.

Stir in bell pepper, zucchini, tomatoes, smoked paprika, oregano, cumin, salt, and pepper. Cook 5–6 minutes until veggies are tender.

Remove from heat, stir in lemon juice and fresh herbs.

Serve over cauliflower rice, sautéed spinach, or alongside a simple cucumber salad.
