The Keto RN Chocolate Strawberry Yogurt Delights

Ingredients:

1 cup chopped fresh strawberries (keep chunks small)

3/4 cup full-fat Greek yogurt (unsweetened)

1-2 tbsp keto sweetener (like Allulose or erythritol)

1/2 tsp vanilla

1 1/4 cup sugar-free milk or dark chocolate chips (Lily's or ChocZero)

1 tbsp coconut oil

2 tbsp crushed roasted peanut (for topping)

Instructions:

Mix the Filling:

In a bowl, combine the chopped strawberries, Greek yogurt, vanilla, and sweetener if using.

Stir until just combined-don't over mix to keep some texture.

Line a tray with parchment paper. Spoon small mounds (1.5-2 tbsp each) of the mixture onto the tray. Flatten slightly into disks. Freeze for 1-2 hours until solid.

Dip in Chocolate:

Melt the chocolate chips and coconut oil in the microwave (30-second bursts, stirring each time) or in a double boiler.

Coat and Top:

Dip each frozen yogurt cluster into the melted chocolate, coating fully. Place back on parchment. Immediately sprinkle crushed nuts.

Freeze again for 10-15 minutes until chocolate sets.
