The Keto RN Spicy Coconut Lime Chicken Thighs

Ingredients:

4 boneless chicken thighs

1 tbsp avocado oil

1 can full-fat coconut milk

Zest + juice of 1 lime

1 tsp red curry paste (or to taste)

1 tsp ground turmeric

Sea salt to taste

Instructions:

Sear chicken in avocado oil. Remove and set aside.

In the same pan, whisk in coconut milk, lime, curry paste, turmeric, and salt.

Simmer, then return chicken and cook covered 10–15 mins.

Garnish with fresh cilantro and serve with lime wedges.

Serve over Cauliflower Rice if desired
