The Keto RN Slow Cooker Pork Tenderloin Tacos

Ingredients:

2 1/2 lb pork tenderloin

1 1/2 tsp Creole seasoning (or seasoned salt)

1 taco seasoning packet

2 Tbsp jarred jalapeño juice

1 fresh jalapeño, sliced

1/2 cup water

1 1/2 cups shredded Colby-Jack cheese

Tortillas (flour, corn, or lettuce wraps

Optional toppings:

- Shredded lettuce

- Sour cream

- Avocado

- Pico de Gallo: 2 Roma tomatoes (diced), 1/2 red onion, 2 Tbsp cilantro, juice of 1/2 lime, 1/2 tsp

kosher salt

Instructions:

1. Place pork tenderloin in slow cooker and add 1/2 cup water.

2. Sprinkle half the Creole and taco seasonings, then drizzle 1 Tbsp jalapeño juice.

3. Flip pork, repeat seasonings and jalapeño juice, top with fresh jalapeño slices.

4. Cook on LOW for 7 hours.

5. Remove pork, shred or slice, return to cooker to soak juices.

6. Serve in tortillas or lettuce wraps with toppings.
