The Keto RN Cucumber Dill Summer Salad

Ingredients:

2 large cucumbers (English or Persian, thinly sliced)

¼ red onion (thinly sliced)

2 Tbsp fresh dill (chopped)

2 Tbsp apple cider vinegar (or white wine vinegar)

1 Tbsp olive oil (extra virgin)

1 tsp Dijon mustard

½ tsp garlic powder (or 1 small clove minced)

½ tsp sea salt (or to taste)

¼ tsp black pepper (freshly cracked)

(Optional) 1 tsp monk fruit/erythritol if you like a slightly sweet dressing

Instructions:

Slice cucumbers thin (you can peel or leave skin on). Place in a large bowl.

Add thinly sliced red onion and fresh dill.

In a small jar or bowl, whisk together vinegar, olive oil, Dijon, garlic, salt, pepper, and sweetener (if using).

Pour dressing over cucumbers and onions. Toss well.

Chill for at least 20–30 minutes before serving to let flavors meld.
